Lately I’ve had the appetite of a four year old or I suppose you can blame it on my lack of motivation to prepare anything that takes more than 5 minutes. But let’s be honest, who really wants to cook for one? I enjoy it from time to time, but I prefer keeping things pretty simple in the kitchen when I’m the only one around. Bread & butter, crackers & cheese, eggs & a heap of mixed vegetables have been staples in this little house the last few weeks. I’m hoping to spice things up a bit here. Maybe even begin one special meal a week kind of deal? Hey, baby steps, k?
